Slightly spicy cold noodle salad with our newcomer, the original kimchi
Ingredients

200 g soba noodles
200 g the original kimchi
100 g cucumber
2 tsp sesame oil
2 tsp rice syrup
5 tbsp water
4 tsp light sesame
2 tsp black sesame oil
radish leaves (other green leafy vegetables or herbs can also be used)
ice cubes
THIS is how we proceed

Cook the soba noodles according to package directions until al dente - then rinse under cold running water so they don't get too sticky. In a small bowl, mix the rice syrup with water, sesame oil as well as the kimchi brine from the jar.
Cut the cucumber in half and into thin sticks and drape on the plate next to the noodles and radish leaves. Add the kimchi and top with the cold brine mixture. Finally, sprinkle with sesame seeds and add the ice cubes and serve.
