The ultimate "cheat meal" - where we also cheat a bit
For 1 person
2 slices of whole wheat bread
2 tbsp melted butter (or a vegan alternative)
1 slice Emmental cheese (or a vegan alternative)
30 g grated cheddar (or a vegan alternative)
2 tbsp "the new kimchi"
Here's how to do it
Butter one side of the bread and fry in a hot pan with the buttered side down. Put the Emmental on the bread, then the cheddar, and then the kimchi.

As you just read, we put our "the new kimchi" heat on this recipe. We would generally not recommend this, as it kills the live bacterial cultures. For this recipe, we offer you to make a small exception and expose the kimchi to a slight heat. If you don't want to do that, in order to retain the maximum number of live bacteria cultures, add the kimchi at the very end, after the cheese has melted.
When the bread is nicely browned, add the second slice of bread on top of the topping and flip the sandwich over onto its side. Cover the pan with a lid, turn off the heat and let the cheese, in the residual heat, melt - this will take about 2 minutes.
Eat directly warm and enjoy to the fullest.
