Ingredients

2 sweet potatoes
100 g couscous
100 g soy yoghurt
1 clove of garlic
1/2 lemon
1/3 cucumber
200 g daikon kimchi
3 tbsp olive oil
Salt, pepper
THIS is how we proceed

Wash the sweet potatoes, prick all over several times with a fork and cook in a preheated oven at 220°C (fan oven 200°C) for approx. 50 minutes.
Meanwhile, place the couscous in a bowl. Add 2 tbsp olive oil and a little salt. Bring 100ml water to the boil and pour over the couscous. Stir briefly, cover and leave to rest for approx. 10 mins. Remove the lid, fluff briefly with a fork and set aside.
For the tzatziki, place the yogurt in a bowl with the juice of half a lemon and the remaining olive oil and mix together. Wash and roughly grate the cucumber. Squeeze out some of the water and add to the yogurt. Press the garlic into the yoghurt using a garlic press and season to taste with salt and pepper.
Remove the potatoes from the oven, unwrap from the foil and cut in half lengthways.
Serve with couscous, tzatziki and daikon kimchi.
