Spring salad with kimchi

This spring salad brings color, freshness and an extra portion of umami to your plate – high in protein, gut-friendly and perfect for light, healthy spring cuisine.
Ingredients

200 g various salad leaves
1 bunch of radishes
1 handful of wild garlic
1 carrot
1 jar of white beans
50 g walnuts
olive oil
salt & pepper
1 jar of cucumber kimchi

This is how we proceed
-
  1. Wash and pat dry the lettuce leaves, wild garlic, radishes and carrot.
  2. Remove the leaves from the radishes and cut both into small pieces.
  3. Peel the carrot if necessary and cut into small pieces.
  4. Chop the wild garlic into small pieces too.
  5. Place the vegetables in a large salad bowl and mix briefly.
  6. Drain the beans and add.
  7. Chop the walnuts and mix in.
  8. Season with olive oil, salt and pepper and mix with a jar of kimchi cucumber.
