Ingredients

2 shallots
1 small piece of ginger
1 carrot
500 ml vegetable stock
salt
pepper
1 jar of Goji Beetroot
150 g crème fraîche
200 g smoked tofu classic from Taifun Tofu
chives & dill
oil
This is how we proceed
–
- Peel and finely chop the shallots.
- Cut the carrot and ginger into small pieces.
- Wash and finely chop the chives and dill.
- Heat a little oil in a pot, sauté the shallots, then add the ginger and carrot and fry briefly.
- Add the vegetable stock, season with salt and pepper, bring to the boil and simmer for a few minutes. Then leave to cool.
- Cut the smoked tofu into small cubes and fry in a pan with oil until golden brown.
- Blend the cooled soup with fresh Goji Beetroot and stir in the crème fraîche.
- Garnish the soup with smoked tofu cubes, chives and dill and enjoy.
