Beetroot soup with crispy tofu croutons

Creamy beetroot soup with fermented goji beetroot, crispy smoked tofu, crème fraîche and fresh herbs. Colourful, aromatic and perfect as a festive starter for your Christmas menu.
Ingredients
– 

2 shallots
1 small piece of ginger
1 carrot
500 ml vegetable stock
salt
pepper
1 jar of Goji Beetroot
150 g crème fraîche
200 g smoked tofu classic from Taifun Tofu
chives & dill
oil

This is how we proceed
  1. Peel and finely chop the shallots.
  2. Cut the carrot and ginger into small pieces.
  3. Wash and finely chop the chives and dill.
  4. Heat a little oil in a pot, sauté the shallots, then add the ginger and carrot and fry briefly.
  5. Add the vegetable stock, season with salt and pepper, bring to the boil and simmer for a few minutes. Then leave to cool.
  6. Cut the smoked tofu into small cubes and fry in a pan with oil until golden brown.
  7. Blend the cooled soup with fresh Goji Beetroot and stir in the crème fraîche.
  8. Garnish the soup with smoked tofu cubes, chives and dill and enjoy.
