Gnocchi-Salat mit Kimchi

Gnocchi salad with kimchi

Unlike traditional salads: gnocchi, edamame, carrots, lamb's lettuce, crispy smoked tofu and mild kimchi with lime and chilli dressing. Fresh, spicy and full of fibre for a gut-friendly diet. Tip: enjoy straight away!
Ingredients for a big bowl

500 g gnocci
50 g lamb's lettuce
300 g edamame
1 red onion or 1 green onion
2 carrots
200 g smoked tofu
1 jar of Mild Kimchi
Sesame seeds

Ingredients for the lime and chilli dressing:

200 ml lime juice
3 tbsp sesame oil
6 tbsp soy sauce or tamari
3 tsp chilli flakes
1 tbsp sweetener of your choice (e.g. agave syrup)

This is how we proceed

  1. Finely chop the onion and carrot.
  2. Cut the smoked tofu into small cubes.
  3. Cook the edamame according to the instructions on the packet.
  4. Heat a little oil in a frying pan, sauté the onion and fry the smoked tofu until crispy.
  5. Either fry the gnocchi in a frying pan until golden brown or cook them in a saucepan according to the instructions.
  6. Mix all the ingredients for the lime and chilli dressing together.
  7. Wash the lamb's lettuce and pat dry.
  8. Mix all the ingredients with the lime and chilli dressing and mild kimchi in a large salad bowl.
Tip

Enjoy the gnocchi salad with kimchi straight away.
