Winter salad with vinaigrette dressing

Colourful winter salad with radicchio, Asian salad, orange, beluga lentils and fermented goji beetroot – served with a fresh vinaigrette dressing. Light, aromatic and perfect for vitamin-rich winter cuisine.
Ingredients
– 

200 g beluga lentils
1 radicchio
80 g Asian salad
1 orange
1 jar of Goji Beetroot

Ingredients for the Vinaigrette-Dressing

8 tbsp Balsamico
16 tbsp Olivenöl
4 tsp Senf
2 tbsp Ahornsirup
salt
pepper 

So gehen wir vor
  1. Rinse the beluga lentils thoroughly in a sieve and cook in a pot with water and a little salt according to the instructions on the packet until they are done.
  2. Wash and dry the radicchio and Asian salad and cut into smaller pieces.
  3. Peel the orange and cut the orange flesh into small pieces.
  4. Place the radicchio, Asian salad, orange and Goji Beetroot in a large bowl.
  5. Mix all the ingredients for the vinaigrette dressing together well in a glass.
  6. Drain the cooked beluga lentils, allow to cool slightly, add to the salad and mix everything together with the vinaigrette dressing.
