Culinary Color Blocking with Our Goji Beetroot

This snack is definitely a feast for the eyes: Grilled corn on a fermented goji-beet cream is easy to make, wonderfully summery, and a real eye-catcher!
Ingredients

230 g Goji Beetroot
100 g yogurt
50 g crème fraîche
1 tsp lemon juice
salt & pepper
2 pre-cooked corn on the cob
1 tbsp olive oil
pickled onions
1 tbsp sesame seeds

This is how we proceed
  1. Place the goji berries and beets in a tall container along with yogurt, crème fraîche, lemon juice, and a little salt and pepper, and blend with an immersion blender until creamy. Then spread the cream onto a plate.

  2. Sauté the pre-cooked corn on the cob in a pan or on the grill. Just before they’re done, add a little honey or maple syrup and let them caramelize slightly. Season with salt and pepper. Then cut the corn kernels off the cobs.

  3. Arrange the corn on top of the beet cream and top with pickled onions and a few sesame seeds. Enjoy!
