Mediterranean orzo salad with kimchi

Our vegan Mediterranean orzo salad with tomatoes, peppers and our Mediterranean Kimchi is the perfect summer recipe. Ideal as a light, fresh lunch or colourful side dish – a holiday on your plate!
Ingredients

200 g orzo / risoni / kritharaki
1 red paprika 
250 g yellow cherry tomatoes
100 g rocket
5 tbso olive oil
2 tbsp herbs
2 tsp salt
1-2 tsp pepper
1 jar of Mediterranean Kimchi

This is how we proceed
  1. Cook the orzo according to the instructions on the packet.
  2. Wash paprika, yellow cherry tomatoes and rocket, chop into small pieces and place in a large bowl.
  3. Once the orzo has cooled, add it to the bowl and mix everything together with olive oil, herbs, salt, pepper and Mediterranean Kimchi.
