Ingrdients

2 green onions
2 carrots
200 g tofu
500 ml vegetable stock
2 tbsp gochujang
8 tbsp e.g. Original Kimchi
200 g enoki mushrooms
Cooking oil
This is how we proceed
–
- Wash and chop the green onions and carrots.
- Cut the tofu into small cubes.
- Heat some oil in a pan and fry the tofu until golden brown.
- Add the green onions, carrots, vegetable stock and gochujang and stir well.
- Clean the enoki mushrooms and remove the ends.
- Add the kimchi and enoki mushrooms to the soup and simmer for a few minutes.
