Kimchi soup

Kimchi kitchen hacks: Is your kimchi too sour? Then use it to make a spicy and warming kimchi soup – perfect for cold days.
Ingrdients

2 green onions
2 carrots
200 g tofu
500 ml vegetable stock
2 tbsp gochujang
8 tbsp e.g. Original Kimchi
200 g enoki mushrooms
Cooking oil

This is how we proceed
  1. Wash and chop the green onions and carrots.
  2. Cut the tofu into small cubes.
  3. Heat some oil in a pan and fry the tofu until golden brown.
  4. Add the green onions, carrots, vegetable stock and gochujang and stir well.
  5. Clean the enoki mushrooms and remove the ends.
  6. Add the kimchi and enoki mushrooms to the soup and simmer for a few minutes.
