Layered salad with fermented vegetables

Is your kimchi jar empty? Our kimchi jars are perfect for making layered salad with fermented vegetables to go. Layer them with chickpea couscous, a tomato and cucumber salad, radish, yoghurt tahini dressing and fermented vegetables.
Ingredients for 4 jars

100 g chickpea couscous
15 cherry tomatoes
½ cucumber
4 radishes
fermented vegetables, wie z.B. Mediterranes Kimchi, Mildes Kimchi, Original Kimchi

olive oil
salt & pepper

Ingredients for das yoghurt tahini dressing

200 g natural yoghurt
½ lemon
2 tbsp tahini
salt & pepper

This is how we proceed

  1. Place the couscous in a sieve, rinse thoroughly with water and pour boiling salted water over it.
  2. Wash the tomatoes, cucumber and radishes.
  3. Cut the tomatoes into eighths and dice half the cucumber. Mix both together in a bowl with olive oil, salt and pepper.
  4. Slice the radishes.
  5. Mix all the ingredients for the yoghurt tahini dressing together.
  6. Now layer the empty kimchi jars: first the chickpea couscous, then the tomato and cucumber salad, the radishes, the yoghurt tahini dressing, and finally a few forkfuls of fermented vegetables of your choice.
