Potato wedges with sriracha mayo

Crispy potato wedges – also known as country potatoes, potato wedges or potato wedges – meet spicy sriracha mayo. A simple, vegan recipe for snacking, dipping or as a side dish - quickly made in the oven or air fryer.
Ingredients for the potato wedges

500 g mainly waxy potatoes
2 tbsp oil
1 tsp salt
1 tsp paprika powder

Ingredients for the Sriracha mayo

1 jar of plant-based mayo
1 tsp salt
1 tsp pepper
6 tbsp e.g. spicy sriracha

This is how we proceed

  1. Wash and peel the potatoes, cut into wedges and mix in a bowl with a little oil, salt and paprika powder.
  2. Bake the potato wedges in an air fryer at 180 °C for approx. 15 to 20 minutes or in the oven at 200 °C for approx. 30 to 40 minutes.
  3. Meanwhile, for the sriracha mayo, mix the plant-based mayo with salt, pepper and spicy sriracha until well combined.
  4. Have fun dipping!
