Brussels sprouts taste especially good in vegetarian dishes - but even better in combination with Planted.Chicken and Kimchi

250g basmati or brown rice
500g Brussels sprouts
4-5 potatoes
100g the new kimchi
350g (vegan) chicken, e.g. herbs & lemon from Planted
1 spring onion
½ pomegranate
2 tsp curry
1 tsp turmeric
1 tsp vegetable stock
1 can coconut milk
olive oil
Here is how we proceed

Clean Brussels sprouts, cut in half and boil in salted water for about 10 minutes. Peel potatoes, cut into quarters and boil for about 20 minutes as well.
Cook the basmati rice according to package instructions with vegetable broth.
Heat oil in a pot and brown the (vegan) meat in it. We use the Planted Chicken in herb & lemon marinade. Drain the Brussels sprouts and potatoes and add both to the pan - let everything fry on low heat.
We then add turmeric and curry to the coconut milk and mix it all together before adding it to the pan and pouring it over the vegetables. Let everything cook for about 5 minutes and season with salt & pepper if necessary. Fold in the scallions and pour into a deep dish with enough coconut milk.
Add the rice, arrange the new kimchi next to it with a fresh fork and garnish everything with fresh pomegranate seeds, spring onions and parsley.
