Cold soba noodles, creamy tahini dressing and fresh and sour daikon kimchi - the perfect combination
50 g soba noodles
2 tbsp tahini
1 tsp maple syrup
1 tsp soy sauce
6 tbsp lukewarm water
Some black and white sesame seeds
2 tbsp "the daikon kimchi"
Here's how we do it
Cook soba noodles according to package instructions and then rinse with cold water.
Cut the cucumber into fine strips.
For the dressing, add tahini, maple syrup, soy sauce, and water to a bowl and stir until you get a creamy texture - add more water if necessary if it's too firm.
Mix noodles with a little dressing, transfer everything to a plate. Spread remaining dressing on top and add the cucumber. Top with "das daikon kimchi" and sprinkle with sesame seeds.
